This book is the real deal. It has everything you could possible need to become a first class expert on the grill. We love the rubs so much we make them to fill a canister and have them ready for any meal. Every member of my family uses this cookbook.

I have most all of the Purviance books in the Weber series. First, I am biased toward charcoal and Weber. Second, I think that the earlier cook books by an author often tend to outshine later works. That said, this is a terrific grilling book which I find myself using much more often than the others in the series. It is really all you need for a variety of grilled items and I heartily recommend it.

I have had this book for a few years and have not had a bad recipe yet. They cover all type of meats and veggies that the choices are near endless. They are so many choices and tips along the way. This book will make you look like a grill king to your friends.

I finally got myself a Weber Genesis Silver grill with the upgraded stainless steel grates and flavorizer bars. This book is filled with hints and suggestions for grilling (both charcoal and gas), as well as what look like great recipes. I consider it indespensible for using my Weber to its capabilities.

I got a grill for a wedding present, and when I bought this book, my wife has not been able to pry me away from the grill! Everything I have tried from this book has been outstanding. My friends say I've become quite a gourmet. My wife says she will never cook again, which is no great loss.

Lots of good idea's in this book. References to cooking times and temps are dead on. It has a lot of good Grilling Info. From selecting your meat on the shelf to prep, cooking, and serving. I was just grilling the basics (burgers, chicken, chops) and now I am out there 3 or 4 times a week with something different.

If you follow the recipes and follow the rules for grilling,you will be successful with this great cookbook. It is easy to read and to follow, with great tips that really insure success. Everytime I've used the book,the 3 factors of recipe, time and temperature have always produced a delicious product.

I bought this book just on a fluke for my father 8 years ago and he still uses it EVERY time he grills!! I just got it for my father n law who is a native texan and even he loves it! I would recommend this to anyone who enjoys grilling/barbeque!

I've been grilling for many years. However, recently I purchased a Weber grill with a number of grilling and/or cooking options not available with most grills. The Weber's Big book of Grilling is nearly mandatory to be able to utilize the full capabilities of the new Weber grill.

The book and recipes are great. No questions about that. But the index in this book is really useless.
You can only search for the exact recipe name but not for the type of food.
This really needs to be reworked.
Some examples:
You are looking for ribs. Try to look up ribs or spare ribs. You will not find anything unless you look under "p" for pork ribs or "p" for pineapple hoisin beef ribs.
Same for Tri-Tip. No luck under "T". But you find it under "R" like Rosemary Tri Tip.
I like the book but if you try to find some recipes for certain types of food you have to scan through the whole book since the index does not help at all.

While "Weber's Big Book of Grilling" has a lot of information, it is geared more toward recipes for sauces and marinades than actual grilling and barbecuing. For the novice who needs tips on the actual grilling process, it falls far short. I found little to help in becoming good in grilling.
I doubt I will open it much again, and am still looking for a good book to tell me what I need to know in the actual grilling process.

I've been grilling seriously now for some time and this book is just average compared to any of Raichlen's books (BBQU) AND I'd say that it would only make an ok companion to his books in your BBQ library.
I knew I'd have issues with this book right off the bat for two reasons that strike right to their credibility...1) gas and charcoal cooking are NOT equal...I have both...but I use gas only for hot dogs or quick items not needing complexity...charcoal and/or a smoker will blow away any gas grill when it comes to taste and how flexible you can be with taste...Weber has a stake in continuing the status quo because they make more $$ selling their gas grills but the superior cooking using charcoal is beginning to be recognized once again...while gas grills sell more...the sales of lump charcoal and charcoal gear has jumped an amazing amount as peope rediscover why charcoal rules the barbecue cooking competitions...not gas...
2) When I look back on the pulled pork sandwich section and see a statement that says "here's strong evidence for North Carolina's claim to being America's 'BBQ Capital'" that came along with two recipes for pulled pork that used a vinegar based sauce I just had to chuckle...my wife is from MEMPHIS...and I've had Memphis, Texas, KC, AND Carolina BBQ and while they are all good in their own right...the order for BBQ taste and national preference as judged in taste tests goes like this...Memphis, Texas, KC, and well behind is Carolina...(KC and TX sometimes swap)...to not include a Memphis style pulled pork BBQ recipe with mustard based slaw topping and to proclaim that Carolina BBQ tops all the others is like not including U.S.'s NFL football in a book on football...focussing on European tackle football (a minor league brand) and then claiming that its World Bowl champion supports Europe's claim to being the football capital of the world!
But I ramble...in short, this isn't the best by far...its basic info. is sparse and often not accurate or it's biased (see above)...you can find better on the web...its recipes look fine and the two I tried were decent...but for a Q-lover and smoker like me they may take it a bit far (what is up with the focus on lamb lately?!)...
I recommend looking at the more realistic and neutral Raichlen's books first...pick this one up if you find it on the bargain rack. (See the Publisher's Weekly review in the item description - it makes part of my case as well...guess I'm a "purist"!)

This is the ONLY book you will ever need for grilling (and maybe even oven roasting and stove-top cooking). Seriously. When I decided to downsize my incredibly large library, I threw out almost all my cookbooks except for three or four "Bibles." This was one of the few I kept. I was sold when I learned from it how to trim fat from lamb, how to marinade lamb, and how to carve a turkey. It taught me everything I needed to know about indirect and direct cooking. It taught me everything I needed to know about rubs and marinades. If you already have a copy, buy a copy for a gift -- one a year until all your friends and extended family members have a copy.
And, yes, it has the best "description" for beer-can chicken. In fact, I think that's why I bought this book originally.

Every great grill, in my case a Weber Genesis Silver B, deserves a good cookbook to accompany it. A cookbook filled with mouth-water, yet easy to prepare meals on your wonderful new grill. A big book, written by people who know grilling and backed by a company whose sole product line consists of the worlds best grills. I am of course talking about Weber's "Big Book of Grilling."
When I say big, I mean BIG; this baby has heft, and size, checking in at almost a foot in length and depth, and filled from cover to cover with beautiful color photos of succulent grill meats and (I don't think so), vegetables. Along the way, in between the big red covers you'll find plenty of advice on grill everything from hamburger to baby back ribs, from bratwurst to leg of lamb.
"Weber's Big Book of Grilling" begins at, well the beginning, with the birth of American charcoal grilling, and how to choose the right grill for you; gas or charcoal. The book then launches into the tools of the trade, grilling and food safety, and the different methods of grilling; i.e. direct and indirect, and the advantage of both methods. "Weber's Big Book of Grilling" leaves no one behind; both charcoal and gas grilling are covered in earnest.

I've had and used this book for a few years now and I can't recommend it highly enough.
It is essential information on how to properly use your grill to properly cook anything on it. If you don't know when to use and how to setup your grill for indirect vs. direct heat then you must have this book. One tip I found very useful as well was to get an oven thermometer and see just how hot your grill gets on various settings-- this is essential knowledge. Most of the built-in thermometers on grills are off by as much as 50 degrees, by the way. Once you have this mastered your cooking times will be consistent and you won't have to keep peeking to see if its "done" (if you're looking, you're not cooking after all).
In addition to the instructions on grilling it explains how to prepare meats for the grill (including what cuts there are, etc.). In particular the section on how to prepare pork ribs for the grill is spot on.
Finally the recipes are first rate and are divided by category (pork, beef, lamb, seafood, veggies, rubs and sauces, and deserts I think). I've cooked dozens of recipes and these are all incredible. Once you do a few you'll be able to mix and match rubs and sauces for great results.
Some of my favorites are the Porterhouse with rub and Dijon Mustard butter, Kansas City Style Baby Back Ribs and the Cajun Corn.
Another book that has another huge amount of awesome recipes is "Weber's Charcoal Grilling: The Art of Cooking with Live Fire" which is very similar but has much more information on cooking with charcoal. This book does cover both gas and charcoal-- the difference is only in the setup, but the Cooking with Live Fire book is better for that purpose.

I got a new bar-b-que grill last Fall and have been experimenting. It's a Weber Genesis Silver B grill and I love it! So far I have grilled lamb on it for Easter, strip steaks with garlic butter, chicken halves with a dry-rub spice mixture, hamburgers of course, and last night we grilled some marinated skirt steaks for my favorite Mexican food: fajitas! Mmm...
So, this review is about a book that I bought this Spring in conjunction with the new grill called Weber's Big Book of Grilling. I thought I knew how to grill meat before -- it's easy, right? Just slap the chicken or burgers or steak on the hot grill and cook 'til you think it's done. That's OK for your average schmo who's satisfied with burnt-raw chicken or hockey-puck burgers. But there is an "art" to grilling foods if you want to do it right. And this book certainly explains how to do it right.
Selecting the best meat is certainly near the top of the list. I bought some cheap strip steaks on sale at a local market and followed the book's instructions on how to grill them right. They looked and smelled delicious - but were as tough as shoeleather. Now I learned that you generally get what you pay for -- good quality meat costs more. Last night's skirt steaks (USDA Choice, this time!), marinated in a lime juice, oil and herb mixture for a day (OK, I cheated and added some Tequila that wasn't in the recipe!), grilled on direct high heat for only about 6 minutes, made the best fajitas I have had - rivaling some of the best ones I've had at restaurants. The marinade recipe, how to prepare and grill the meat, even a recipe for pico de gallo -- they're all in the book.
I learned through the book how to cook hickory-smoked pork ribs, slowly by indirect heat, on the gas grill. The tangy "basting/dipping sauce" recipe they include with the grilling instructions is excellent -- I never would have thought of any of that on my own.
There is good information about how to select meats (all kinds: beef, pork, poultry, fish), how to prepare them, recipes for sauces and marinades, even sections on grilling vegetables and desserts! The writing is easy to follow, with a sense of humor throughout. There are also some entertaining stories about the origins of Weber and grilling.
Get yourself a good grill, get this book, select top-quality meat, use kosher salt and fresh ground pepper, pour your beer into an iced lager glass, and you're in business!

Even up here in Michigan I do tend to grill year round. I'll gladly brave a mid-January's frost to toss some steaks on the grill. There's just nothing like it. But still, it's at this time of the year that most people think about grilling and BBQ. Weber's Big Book of Grilling has been a staple of mine for many years. Even as a veteran griller I've still found a lot of helpful advice and tips. You'll find expert advice on grill methods, types of grills, buying meat, herbs and marinades, etc...At over 400 pages and nearly as many recipes, you're sure to find something you like.
The recipes range from the staples like burgers to variations like Buffalo burgers with Chipotle mayo, Teriyaki chicken burgers, and bacon mushroom burgers. The grilled steak tacos are just fantastic as are the fajitas. The flank steak with Salsa verde is another winner. Beef, chicken, pork, lamb, seafood, vegetarian, no matter what your preference, this book has a great recipe for it. Whether you're looking for a hearty brisket to serve a house full of guests or just making an elegant meal for two, you'll find it here. As much as I consider myself an expert, I always return to Weber's Big Book as a source for great information.

Okay. I will admit it.
Despite the risk of being stereotyped, I love to fire up the grill - I am a charcoal man - and sear that entrée. For me, grilling is more than another cooking method. It is a way of life. At my advanced age, it is more than sport.
I love to create barbeque sauces. This spring, I was introduced to rubs.

I can't say enough about this Weber book. I purchased this one, and the first one ("Art of the Grill") at the same time, fully expecting to like the first one more. Well, as it turns out, the Big Book of Grilling has been used upon every single grill day (at least 3 days/week) as apposed to the other one, which has only been used a few times.
The Art of the Grill (the first book) contains some very involved recipes that are very tasty, but not any of the practical cooking tips. The Big Book of Grilling, however, highlights the following:
* Tips on what to look for when selecting the best cuts of meat at the grocer/butcher.
* Explaining cooking tips such as when to use direct heat vs. indirect heat cooking, and how to make those cross-grill marks on your steak!
* A wide variety of homemade marinade recipes.
* Helpful charts at the end of the book which you can quickly reference when you quickly need to know how long to cook something no matter if it's a porterhouse steak or even a bunch of asparagus.
* Great side stories, like how to cook enough ham sandwiches for the town of Peoria, IL.
Just overall, this book has been a godsend when it comes to my grill. I have an older Weber 3-burner model that allows me to easily switch from direct to indirect heating, but the book also compensates for the charcoal users out there. I bought this book based on a recommendation of a friend. Wow! Am I ever glad I did. This book tells you everything you ever wanted to know about grilling. You don't even have to have a Weber grill. It will explain how to make the perfect grilled salmon and change your mind about how to grill a steak. Steaks always come out perfect, juicy, and just the right amount of flavor. The additional recipes for side dishes and toppings are worth the cost of the book. Even if you are an old pro at grilling, this book can help you become better. You won't be disappointed with this book. I keep it in the kitchen and glance through it before going to the store for ideas. If you are new to grilling, like I am, this book should be in your collection. It's not a thin pamplet style book either. It's more like a grilling catalog full of recipes and ideas. You won't be sorry with this purchase.

Can I just tell you that I love this book!! My Dad just got this for me about a month ago and I've been grilling up a storm at least 3 nights a week ever since! In fact, for my Mother's birthday party, I cooked up 22 Maple Glazed Pork Chops with Suckatash Salad and everyone was wishing that I had made more! For one who has been cooking for about 5 years now, I have to say that this is my new favorite book. And one can not go with out reading the story about the Ham Sandwiches. I was laughing so hard that my parents wanted to know what it was all about, so I read them the story and they quickly joined in the laughter. And even though I live in a pretty cold area of the county, the upper Midwest, I don't plan on letting the frigid below freezing temperatures stop me from grilling up some mouthwatering meals! Like the Holiday Beef Tenderloin with red/pink peppercorns that I'm planning to grill for Christmas Dinner. The organization of it is well appreciated, not to mention the drool-inducing photographs!

certainly a must have for those starting in the Grilling scene. Not as good as his book "Weber's Real Grilling". This book can take you from back yard burger flipper to expert chef of baby backs and tri-tip or salmon and lamb. There is not a single receipe I have tried that I did not like, some are appreciated more than others though.

Big describes the difference. Quality recipes, photos and grilling basic advice are all here, but now more of it. Also, more informal recipes I'm discovering which probably will allow its usage more than just the occasional weekend bbq blast.
So far, pigged out on Greek Garlic Chicken, Disappearing Tenderloins with Pico de Gallo, Grilling A Monster Fish, plus great side dishes of veggies and grilled fruits and desserts.
Worthy to become a classic standard! Next to my Weber all the time!

Weber's BIG BOOK of Grilling is out of this world!! I purchased this book along with Weber's Art of The Grill and while they are both great I would pick this one over "Art" for an all around grilling cookbook. This was a VERY well thought out book, it is easy to find what you are looking for and offers great advice for beginners to grilling. It is broken down into food "groups" and then delves into each group with a nice assortment of recipes. The best thing about grilling with an actual Weber grill and using this cookbook is that if you follow the recipe you can't go wrong. It truly can take you from the "You burned the burgers Again!!" to "Wow these are great burgers". I really could go on and on about this book but I won't, just trust me and purchase it, you will not regret it.

This is an all-around great cook book with nice big pictures, and error free recipes. I've tried several already, and they've all turned out great. I didn't believe I could get good tasting ribs from only 2 hours of cooking, but it really worked.

From appetizers right through to desserts, you can go grill-crazy with this book absolutely jam-packed with recipes. How to's on barbecuing everything from the traditional beef, lamb and poultry to the less common rabbit, turkey and buffalo. Marinades and sauces are also included because, let's face it, a good piece of grilled meat just isn't complete if it's not smothered with a tasty sauce. So, get out the Weber and dive into this book. There are enough fantastic recipes for a barbecue a day to last a whole year, with some left over for next year.

this book is awesome! What I like about the book is that the recipes are real - the Asian recipes use things like fish sauce,hoisin sauce, sesame oil, fresh cilantro,and rice wine, rather than a bottle of teriyaki sauce from the store. I think that may intimidate some cooks, but trust me - just give it a try - once you have those types of ingredients on hand, you can make all kinds of new dishes. We've made probably 25 recipes from this book so far, and they're all great. If you like to grill, and aren't afraid of a little experimenting, this is the book for you!

This over-sized cookbook is a valuable tome to have on hand; every question you could possibly have about grilling is covered from grouse and game to rocking hamburgers and simple chicken. There are abundant recipes for sauces and marinades as well as easy-to-reference grilling times for everything you could want. Even vegetarians will appreciate the variety of recipes - eggplant and other veggies are well represented.
I was delighted to find that most recipes called for basic, safe ingredients like honey, vinegar and soy sauce instead of commercial, pre-bottled and preservative laden crap. You could cook out of this for weeks at a time and never get bored or repetitive. Highly recommended!

The Weber's Big Book of Grilling is the single most used cookbook that I own, out of over 100 cookbooks. There are so many outstanding recipes that it is difficult to know where to begin. If I get a couple of good recipes out of a book I think it's mostly successful, but I have made at least 30 from this (most of them I have repeated) and they are all outstanding. The beer can chicken, the tequila shrimp, the texas rub. There are excellent technique descriptions throughout the book that describe how to do various things correctly right down to making the proper grill marks on a steak. This is a serious grilling book for those truly dedicated to the type of Man cooking that provokes both ridicule and awe from the fairer sex. Grill on, but you will need this book!

This is one of the best cook books written. Finally there is a cookbook that is actually enjoyable to read. The book is peppered with great cooking stories and great pictures. I like the picture of the dog running off with your freshly grilled steak you just dropped. The grilling tips for each type of food, and the spices information and use tips are very helpful to new and well seasoned cooks. The grilling tips make grilling a joy and it makes the food turn out great. Ever wonder why that freshly grilled steak at all those friendly barbecues at your friends house or at the in-laws barbecue's tasted awful? This book tells you why and how to avoid all the mistakes. Your grilled food will now taste much better with that professionally made look. Some of the Salmon cooking tips are found no where else and, man, do they work. I now make the best grilled and salmon on the block, perfect every time! I live in Phoenix Arizona where the grilling season is 365 days a year, so good grilling skills are very important. Its now December and its 75 degrees outside with clear blue skies! Got to go, I have some fresh trout ready to grill!

The appropriately named "Big Book" is so deliciously written and beautifully photographed that with the addition of a few dollops of one of Purviance's tasty marinades it too might taste pretty good. But before you start gnawing on the pages of this opus to outdoor cooking, try a few of the recipes. You'll find, as I have, that not only are each of Chef Purviance's creative masterpieces relatively easy to prepare, but that they can be paired to create multi-course meals from appetizers to dessert. What a fun cookbook! Just expecting a few good grilling ideas and some Weber history, I first opened this book to the words "Are you still using lighter fluid? Say it ain't so. . . ." and I was hooked. This tome is packed with sumptuous pictures of everything from Cheesy Onion Quiche (yes, you can GRILL it!) to Teriyaki Mahi Mahi with Mango Salsa. The recipes are tantalizing--but what really sets this cookbook apart is the snappy patter that accompanies the standard instructions. McRae, apparently the writer of the team, has peppered the text with barbecue history, anecdotes, and quotations that make reading half the fun of cooking. The directions--for example, preparing a rib roast--seem eloquently simple and are illustrated with drawings to reinforce your confidence. It's the chatter that I appreciate, however: "And then there's the precocious debutante of the poultry world, the Cornish game hen, which nowadays is neither Cornish nor game." Lots of enticing info you can relate to your guests as you serve up your next barbecue.

I was never expecting it to be a favorite when I originally purchased it. My sister now owns it too and has given it a pretty good workout also. Relatively easy with plenty of good photos. We utilize this book so much in the summer! You can cook your whole meal on the grill and not heat up your kitchen in the summer time. This book has very easy recipes that taste great. I have a herb garden that I get to use so much because a lot of the recipes call for fresh herbs. This was recommended to me from a friend and I have recommended it to other friends. This is a great compliment to a Weber (or any) grill. It's not full of overly complicated recipes with exotic ingredients that only a full time chef could appreciate nor is it overly simplistic. I find it to be right where it needs to be. One thing that pleasantly surprised me about this book is that it's actually a good read. It has more than just recipes; it explains a lot of the ins and outs of BBQing. There are also a lot of humorous storied peppered throughout.

You not only come away with great recipes and techniques but the knowledge to make your own recipes (marinades, dry rubs, etc.). This book is great for novice to expert grillers. Grilling being the key to this book unlike other "BBQ" books this is centered toward people who grill-that being those of us who don't always want to deal with thick sauces or have the time to slow roast things for hours. There are some recipies for BBQ but most are straight forward, simple but delicious meals that can be completed in under an hour. I have many grilling/bbq books and this is by far the one I go to the most! Some of the recipies in the book are online but there are many that are not. If you are looking for a grilling book this is the one, if your more into BBQ & Smoking food you might want to try the Bar-B-Q Bible or other such books.

This is why I love the store. You can get items like these that would probably have cost twice as much at a bookstore. I haven't tried any of the recipes but they look easy to follow, as I am a novice in BBQ-ing. The book is heavy and the pages are thick, I can't believe the store picked up the shipping for this, but then again my order was $25 or more.

I bought this book from the store along with my weber grill a couple of months ago. I was a novice when i bought both but always enjoyed my parents bbq and wanted to learn the art myself. This book is amazing just for its advice on how to cook certain meats, and includes seafood and vegtables also. I now consider myself intermediate at grilling and i attribute all of that success to this book. it motivates you to broaden your horizons, and that's probably the best thing about the book. no complaints what-so-ever.

I'm one of those people who loves buying and looking through any kind of cookbook. I get cooking magazines too (including Gourmet). But so far, nothing tops this grill book. It is my favorite! And my husband's too. We've had it for several years and have probably made at least half the recipes in it - and they were all so tasty! I even use some recipes for non-grilling ideas. I highly recommend this book for casual grilling and formal entertaining. There's something for everyone.

My first use was for our Thanksgiving turkey. Since we had several guests, I needed the turkey to turn out. Remember this is my first ever grilled turkey and first on my Weber. It was quite cool outside with a fairly strong wind to complicate matters. How long will it take with these weather conditions? Well, I followed the directions, including seasoning, and added just about 15 minutes to the recommended time for my size turkey. It couldn't have turned out better. Also, it was done right on time. Everybody commentted on how good it was and how moist.

This book has colorful pictures and excellent tips to start grilling. Although I do not use charcoal, propane works just as well and the book contains how to cook with propane step by step.
I have tried several marinades, pork, tuna, and steak- all most tasty when following recipes in the Big Book.

I was looking for a comprehensive cookbook that covered all the BBQ basics--grilling time, direct vs. indirect heat, how to prepare food for best grilling results, etc. I have found it (and much more!) in this book. Not being afraid to put just about anything on the grill, this book covers it all from appetizers to desserts, all with delicious results. Just try the Beer-Can Chicken (I laughed until I cried just seeing it sitting there on the grill, then cried with joy over how moist and flavorful it was), and you will want to try each and every recipe in this book.

This book has everything a griller could need. The layout is easy to read and the pictures/illustrations are very helpful. There's several sections for beginners, from learning how many coals to use on a charcoal grill to how long to cook different vegetables, even charts that layout what part of a cow/chicken/etc. your cuts of meat come from. The recipes are great, and the section of recipes for marinades/rubs has a lot to choose from. I'd highly recommend this to anyone who enjoys grilling or is learning how.

This cookbook is very well written,easy to follow and gives a lot of hints for grilling that actually work! Love the pictures and the recipes are from simple to fancy,but it is well explained. A must have for the outdoor grillers.

The best bbq book I have every had the joy of using (and I have lots of them). Try out the Grilled Asparagus with Tarragon Butter on Page 341. Wow - also the crab cakes - need I go on? The explanations regarding direct and indirect grilling methods are concise and well thought out - I bought one and have more on order for others - enjoy and buy!!!!

This is a great compliment to a Weber (or any) grill. It's not full of overly complicated recipes with exotic ingredients that only a full time chef could appreciate nor is it overly simplistic. I find it to be right where it needs to be. One thing that pleasantly surprised me about this book is that it's actually a good read. It has more than just recipes; it explains a lot of the ins and outs of BBQing. There are also a lot of humorous storied peppered throughout.
All in all it's really a great book to have.
