One of my go to cookbooks. I have yet to find a recipe we don’t like. There are a few that challenge my love of lazy cooking, but that is found in every book. I would buy this again, and have recommended it to others.

I will first say it is a beautiful book! Full color pics of each recipe. We all like to know what it should like! Great easy layout. LAYS FLAT!! All cookbooks should be like this. Some of the other cookbook Vegan IP authors should re-do their cookbooks now that the IP is becoming popular to include pictures, and regroup their books into an easier to read format like this one. Fast healthy food. I have made about 5 or 6 things and they all came out well and everyone loved them.

This is an amazing recipe book with great information on how to properly use your Instant Pot! When I first got my IP, I was somewhat overwhelmed, and then I received your Cookbook and made many of your recipes, and feel wonderful about this marvelous machine. It's all thanks to the step by step instructions found in this book. I use it many times a week and will get another Instant Pot (IP), for our Lake house, to save me from taking it back and forth.

I have ALL of Kathy Hester's cookbooks and, really, really, really, each one is fabulous. She is an inspired food poet. I don't know of another way to put her work into words.

I'm still new to my Instant Pot and I was actually kind of intimidated about where to start so my pot sat in my cabinet for a long time until I got this book. This is book is really cool, it starts with everything you need to know about your instant pot -- what the buttons are, what accessories are real nuts and bolts, do s and don't s. Then it goes into 5 get started recipes. After that it builds up on your skill set until you get to one pot meals and then desserts. I really the quick reference charts because i"m still at the point of "how do I cook chickpeas?" I've only done about 5 recipes so far (the really easy ones) but I have to say having this book handy has given me more confidence to try things in the instant pot. I find it clear, well-organized and lots of great ideas I'm slowly easing my way into.

I love Kathy Hester books. They are all helpful and the recipes have been tested. I wasn't sure about the Instant Pot. But, was given one for my birthday. This book took all the fear out of the Instant Pot. The food is super fast and as always taste great. I still use my slow cooker all the time. But, it is great to have super fast cooking options. These recipes are faster than getting take out.

I have been following Kathy Hester's blog and her Instant Pot recipes for some time now. Her dishes are very tasty, nutritious, and not hard to make--especially with the Instant Pot. I have other Instant Pot cookbooks that I love and use a lot--purchasing Kathy's was a welcome edition my Instant Pot cookbook library. Her recipes cover all the meal categories. I look forward to expanding my favorite meals from this cookbook.

I was extremely disappointed in this book. First of all, who is the intended reader? I eat Vegan and I have an Instant Pot so I thought this would be a good fit for me. It was not. The little recipe book that comes WITH the Instant Pot tells you how to cook steel cut oats in it. So this book, The Ultimate Vegan Cookbook for your Instant Pot, tells you how to cook rolled oats in it. By placing the oats in ramekins and stacking them inside the instant pot and basically steaming them. Look, if I want rolled oats I will just cook them on the stove. And there is a recipe for bean burgers. So is this a book for people with no stove and just an Instant Pot? Maybe kids in dorms? No, because they would not have ramekins. And why the entire section on making your own spice blends? Yes, now I know I can make my own jalapeno powder, but (a) I never will, and (b) I bought this because I wanted to know some good recipes for the Instant Pot that were vegan. On to the bean recipes: these are not particularly original or tasty. Many call for ingredients I would not be able to buy locally (black chickpeas, black salt, etc.) and that I would have to buy online. I actually had the 16 ingredients for Mushroom and Butternut Squash Chili Bean Soup and so I made that. As I was placing the spices in the pot I thought to myself "Chili powder, cumin, thyme and oregano? Then apple cider vinegar and paprika and liquid smoke? I cannot imagine how this will taste". Then I cooked it and tasted it. We all found it to be rather foul, like something that would happen when you combined leftover black bean soup with a mushroom and squash casserole. I actually returned this book because I don't think there is anything useful in there for me.

I hated this cookbook. There was nothing in it I wanted to make. I tried one thing it was horrible. I do not recommend. I’m still looking for a good instant pot vegetarian cookbook if anyone has suggestions.

I have 'read' the cookbook and can't wait to try some of the recipes in my Instant Pot. I think I will be VERY pleased with the flavors etc. of everything I will be trying. The directions are very clear and Kathy Hester's recipes look quick and easy.

Kathy's recipes are easy to follow and turn out great. They have a lot of flavor - I love cooking in my Instant Pot and having easy, delicious health conscious recipes is a must!! I've already recommended to a friend and they love it as well!

I purchased this cookbook and have enjoyed 4 recipes from it already. I love using my instant pot - I've had it now for about 4 months. The first recipe I made from this book was the applesauce. I was just starting out and wanted to keep things simple. It worked great. The instructions are easy to follow.

Some of the recipes were more just how to cook items in instapot - like the spaghetti squash recipe, or potatoes. Also personally I'm not a fan of devoting time to breakfast in a cookbook. Also, just not much that even was appealing to my family. I'll stick with converting other recipes and google.

Updating my review as my tastes have changed moving to a Whole Food Plant Based Oil Free diet vs just regular vegan diet. Initially here were only one or two recipes that I was interested in. Now that I have been WFPB for over a year I took another look at this book & decided to give several more a chance.

Have made 2 recipes from this cookbook so far. Healthy Cream of Asparagus Soup and Mushroom and Butternut squash Chili Bean Soup, both were disappointing. The soup was bland not to mention that i had to dirty a blender to puree after cooking the asparagus and cauliflower. Bought the IP to cut back on the work in the kitchen! The Chili was watery and not nearly as tasty as I expected. I even substituted veggie broth for the water when making the Chili, expecting like the soup it might end up bland. I would make neither of these recipes again, and am feeling doubtful about trying any others. Should have waited for the library to get this book in so I didn't waste my money.

I really wanted to love this book since I just bought my IP. The first night we used it we decided to make the not re-fried black beans and the hot jalapeño sauce. Both recipes looked delicious and the instructions seemed easy. After the beans cooked the alotted time, we noticed they were not done all the way and needed to add 25 minutes to the recipe, and it was still very watery. No where in the recipe did it say we needed to pre soak the beans, or that the beans would need to be drained once finished. So I wasn't super happy with that since I expected it to be ready to go when done. The Jalapeño sauce was delicious, but also very watery. I was not expecting that. Not sure if I will keep this book.

This is a good book for beginners who don’t know much about using the InstantPot or much about vegan foods. However, I was sad to see that some recipes lacked flavor such as the burrito bowl recipe. Many of her ‘layered meals’ recipes involve using a trivet to simulataneously steam a grain and a veggie while the main dish cooks underneath. However I find that the trivet ends up getting a lot of the seasoning trapped on the bottom. So this cooking method is only good for naturally bland or mild foods. Her Indian Dal recipe is quite delicious when prepared without layering (again the trivet gets seasonings stuck on it). I really don’t like that her cooking time for the burrito bowl was 12 mins when the IP manual recommends 20-25 mins for soaked pinto beans. The beans were not tender enough and not flavorful.

I love this book. In June, I made the change to being a nutritarian. This book has been incredibly helpful. I can make tasty meals efficiently, that can be re-heated for days. I have found that doubling the spices is helpful. I swap lentils for pasta and rice in most dishes and onion and garlic powder for salt in all dishes. In addition to that, I use veggie broth whenever water or other types of broth are in the recipe. I enjoy starting with Kathy's recipes and modifying them over time to suit me. I appreciate having a good baseline to start from and return to if needed. I feel competent and creative using my Instant Pot. The family loves what I make. I have gone from a guy who could only grill out to someone who enjoys creating things for dinner. Great book Kathy!!! Thank you.

Best purchase I could make for my Instant Pot! Such a versatile book, with plenty so many of my favorite things! Highly recommend! My copy came with the back cover pretty bent and somewhat damaged which was annoying but the book itself is amazing.

I have only read thru the Kindle sample, which was not a lot of content. One thing I really prefer to see in the sample is a Table of Contents or Index so I can understand what recipes the book has. While the picture on the front and the few recipes shown in the sample seem like I'd really enjoy the rest of the book, I probably won't buy it until a TOC is included.

This is a great cookbook. Everything I've tried I've enjoyed; cauliflower queso, tamales, winter one-pot, etc... I have also met the author, Kathy Hester. She is approachable and willing to answer questions which makes me love her simple-straightforward-use-what-you-have style even more. The fact that the recipes are separated into the saute ingredients vs. pressure cooker ones is a bonus for when I am not paying as close attention to the directions. And you can't beat the pictures of her beautiful and delicious food too.

I was waiting to write a review until I had tried quite a few recipes. Well, we have. Once again, Kathy has written a book the whole family loves! This book does not disappoint. There is something for everyone in here. With no-oil options, it is fantastic for those of us on China Study based books. She gives a great break down of the instant pot usage as well as recipes themselves. There is something for every taste as well.Kathy has also treated us to extras like how to make our own spice mixes and sauces. Of course, there are delicious desserts as well. Kathy's books are all ways down to earth, great cooking with great choices for a variety of tastes. Do not hesitate on this well annotated easy to follow, step-by-step book. If you are new to Instant Pot or not, this is a book you will want.

My wife and I eat a mostly vegan diet, and have loved the books in the Thug Kitchen series. When I recently got an Instant Pot, this was my first cookbook. On the whole, it has been an unceremonious disappointment. A few things have turned out ok, but nothing has turned out great. The unifying theme seems to be a joyless blandness. If I was new to vegan cooking, this book would be enough to cause me to change diets.

I'm going to give the Instant Pot another try with a different cookbook, but I fear my wife's mind is made up. Don't let this happen to you.

Worst cookbook I have ever bought! I eat a whole food plant based diet and own many cookbooks for this way of eating. I had to give it away because I could not even get any of my friends who eat this way to buy it. Waste of money!
