Great recipes from America's Test Kitchen. As with most things from America's Test Kitchen, the recipes, hints, and tips are well researched.

This is a sizable book, over 450 pages and an inch thick, and as such is a little unwieldy on the counter top.

For years "How to Cook Everything Vegetarian" was my go-to cookbook--the poor thing is tattered and torn and held together by duct tape. Using skills learned from Bittman, I can throw together a meal from ingredients on hand. But I wanted to challenge myself, and after a bit of research, got this book and am now having a great time learning new techniques and making new dishes.

Because of the Test Kitchen's mission (to test all versions of a recipe to find the best version),a recipe can seem complicated--two paragraphs of why a recipe works, lengthy list of ingredients, persnickety directions--but after reading it closely at least once, much can be condensed and the recipe become more manageable.

I'm glad I bought the cookbook and will likely buy another from the Test Kitchen.

The recipes are varied, well thought out, and simple to follow. The fideos recipe is amazing! The potato vindaloo recipe served as my gateway into cooking Indian food (it's actually not that hard). I would have given it 5 stars if the binding wasn't complete junk. I've owned this for a year now and the cover has completely separated from the spine, which is now held together with gaffer's tape. Re-print this as a proper hardcover, and I'd buy it again.

This is such a wonderful cookbook. I'm not fully vegetarian anymore, but eat very little meat and fish, and like to find vegetarian options for foods I love, such as baked beans and chili - the recipes in this book exceed my expectations. I can't wait for the yield from this year's vegetable garden, which will start in early July, as I'll utilize lots more of the recipes. This will be one of my go-to cookbooks for sure, as it already is.

Hands down one of the most useful and usable cookbooks I have. If you appreciate ATK's systematic approach to testing recipes and writing careful instructions, and you aren't interested in cooking meat, then this is the cookbook for you. While the photos are nice, it devotes more real estate to providing well-written recipes that have few ambiguities and lots of helpful hints.

My family recently decided to go vegetarian at home, and this has been a great purchase to get me started. There are tons of vegetarian cookbooks, but ATK always has great stuff, so I thought I would give it a try. This book has good info that covers the basics, and some delicious recipes. I would love to see more photos, but it definitely has more than most vegetarian cookbooks out there!

America's Test Kitchen has done it again. I purchased this for myself and then ended up giving 3 copies to friends. I like that it has instructions for basics like how to cook vegetables as well as more comprehensive recipes. I roasted broccoli and cauliflower according to their instructions and both turned out better than I have ever made them before.

I have 5 other books from the publishers of Cooks Illustrated so thought I'd try this one. I have the classic vegetarian cookbooks -- Moosewood, Moosewood Restaurant and Enchanted Broccoli Forest but wanted something more substantial and updated. The recipes and tips appear to be as great as those contained my other Cooks Illustrated books and I look forward to trying the recipes it contains.

The content of this cookbook is great. In love the recipes. Highly recommend them.

However, the binding is cheap. Pages began falling out after owning this book for a week. Going to have to figure out how to organize the book since the binding isn't built to last.

Vegetarian, not vegan, which is ok, but many of these recipes do use cheese and eggs. I'm ok with that, but some vegetarians may not be. As I've come to expect with ATK, the recipes are very good, well thought out presentation, AND with lots more photos than many of their books have, which is great. Everything I've made so far was very good.

I love the recipes and the content in this cookbook BUT the pages are falling out of the binding of this paperback cookbook. I have treated the cookbook with care but the pages are still falling out, and it seems that the book binding is just not well constructed. If there is a hardcover version I would recommend purchasing that edition instead.

The table of contents is shadowed. Because it is not highlighted, it is not possible to open the table of contents on my iPad. To go to the table of contents, it is necessary to click the little picture of the magnifying glass that is used for a search. I am still trying to figure out how to find an index.

I have recently become a vegetarian, so I was happy to find this book. I've seen America's Test Kitchen and enjoyed the show. The only bone I have to pick with it is that many recipes use exotic ingredients that one is not likely to have around the house. As it is, I haven't really learned how to be a vegetarian yet, and I was looking for some guidance, which I found lacking.

I love this cookbook! One great thing about it is that it has a system in the index that tells you which recipes are "fast" and "vegan" so you don't have to flip to the actual recipe and look through the whole thing. I've made multiple recipes out of this book so far and have liked them all.

I'm vegetarian because of health reasons, not by choice. It's been difficult giving up meats but this cookbook has definitely helped! I've made the red beans and rice (it tastes very close to my recipe made with sausage) and the tempeh Reuben sandwich. Even my omni husband loved the recipes and went back for seconds! Highly recommend for all levels of cooking and all stages of vegetarian. Please note that this isn't a vegan cookbook, but does have a selection of vegan recipes.

Wonderful addition to my cookbook arsenal! I'm a vegetarian trying to go vegan and these recipes can very easily be adapted to vegan by substituting vegan butter, milk and cheese for the dairy. The recipes are tasty and my husband and kids never complain. Highly recommend.

Seriously so thankful for this book. Growing up taco night was as exotic as it got. This book explains different types of noodles and onions and even lettuce and which lettuces pair well together. It explains the correct way to cut vegetables. It was my guide to learn how to be confident in the kitchen.

This book is extremely helpful and is easy to understand. It shares great tips, includes lots of illustrations, and provides a variety of different recipes. Although the spine of the book started to separate and some of the pages began to fall out. I didn't like that it happened but it wasn't a deal breaker for me. Overall, I am satisfied with this purchase and I might just buy another cookbook from this brand!

I use the cookbook almost every night after switching to a vegetarian diet a few months ago. The tomato tart on the cover is delicious, as is everything else I have cooked. I'm a firm believer of anything from America's Test Kitchen and this cookbook is worth every penny.

Great recipes but also good insight into how to create delicious vegetarian meals of your own creation. We are not "total" vegetarians, but like to add more healthy meals into our lives. Highly recommended!

An eclectic assortment of recipes, which haven't disappointed. Additionally, you learn how to cook the "meat substitutes" that you have heard of, but have no idea what to do with. Highly recommend, if like me, you are trying to reduce meat consumption without losing familiar foods or going " all granola".

The recipes are hearty and worth the challenge to make. This was a purchase after checking it out from the library. We loved the book so much. The recipes are explained in detail for success. We eat these dishes on days with no meat dinners. Great Book!!!

Everything I've made from this cookbook tastes amazing! However, almost each recipe requires a little more work than I'm willing to put in on a day-to-day basis. Great when I feel extra motivated to cook something nice. Also serves as a helpful reference for various ingredients. Lacks desserts, but I guess that's another cookbook.

Unfortunately, after a mere dozen uses, the binding has come apart on the book. Given my gentle handling of bound texts, this is a function of poor binding quality....

Husband has cooked professionally and he has learned a few hints from the cookbook. I cook like most folks...because I like to eat. The tips and hints included are interesting and quite helpful; the recipes are delicious; the book is wonderful to just look at.

This is my absolute favorite cookbook! The recipes are creative and flavorful and easy to follow! I also love the incredible diversity in ingredients and flavors that they manage to fit into this book. It really is an incredible how many unique and original recipes you get in a single book. I've loved everything I've tried so far (maybe 20-30 recipes?) but my absolute favorites have been the soups/stews and salads. I never used to follow recipes for salads - just chop up some veggies and add some dressing, right? WRONG. Follow these salad recipes and be ready to have your mind blown. People are super impressed when I bring these to potlucks or dinner parties.

Like most people these days, I normally get most of my recipes online but my biggest complaint is that they can be so unreliable. Even if there are lots of comments and feedback from people who have tried it, you can't know for sure how a recipe will turn out. Especially with the proliferation of food blogs, the quality of recipes online has generally been disappointing to me. Well, I've had almost a 100% success rate with the recipes I've tried in this book - all of the instructions, quantities, times/temperatures, etc. seem extremely well vetted, I've never had to make any adjustments and the recipe always comes out amazingly!

Also, this book is extremely informative. Lots of good info on food types, prep methods, and how the recipes were developed. Not necessary to read all of it just to follow a recipe, but if you're interested in learning more about cooking there is a lot to learn in here!

The photography is beautiful and the full color photographs really help inspire you when you're just flipping through trying to figure out a random new recipe to try. The quality of the book itself is very good with thick, high quality pages, but as some people have pointed out, the glue in the spine does separate from the pages leaving a gap when opened. I'd consider this a negligible complaint, especially since a well-loved cookbook will always show signs of wear and tear!

100% recommend this book to anyone who enjoys vegetarian food! Also makes a great gift for others!

It is very good. My only complaint is that theres a lot more vegan than just vegetarian, I feel. I dont mind it, per se, but I think i would have rather this book just be vegetarian and a separate vegan book. Im not quite ready for full vegan yet and I don't know when or if I will be.
