Purchased this book as an "authoritative text" for use in court when representing clients in connection with food borne illness claims. It explains how things are done and why. Also, great section for terminology.

This edition is the most comprehensive book for an aspiring chef, a novice cook or someone who just entered the workforce in a professional, industrial or any commercial kitchen. This book is for you. I have worked in restaurants for many years, and was accepted and got a new job in an industrial kitchen for a grocery store. As health and food safety standards are always met, especially working and dealing with all food items that are organic. This book is vital to learn new skills in the kitchen, and hone it as your perfect it while producing recipes and serving food to the public. It has everything that you need to know the basics of what a professional chef should know, explore, learn and use it.
This is probably one of the best textbooks that has been updated for today's chefs and cooks. I liked how each chapters explains it clearly and concisely.
The Kindle version is the same of the hardbound book, but of course, this is not heavy. Great resource, and easy to learn.

The book is thick and full of helpful information. Whether you are looking for information on food safety, food prep, cooking, baking, or desserts this book is the book for you. You can't fit every possible recipe or every possible type of food into one book, but this book will get you started on almost any type of cooking/baking and provides many helpful pointers.

This is an amazing book! My mother asked for this - and only this - for Christmas. It has EVERYTHING you could ever want to learn about cooking techniques, spices, meats, vegetables, basic recipes, butchering, etc etc..literally everything! If you want to learn proper techniques, basics, or advanced cooking, this is the only book you will ever need. The photos are beautiful and it's very easy to follow.

This book is amazing, teaches all about the kitchen, and 1000s of recipes for any situation/event. No downsides except the massive size won't let me take it everywhere even though I want to, but it's a large book haha.

Absolutely love this book. As an amateur cook looking more specific technical knowledge this book is wonderful. I have already utilized several of its techniques and recipes and all have been excellent. The information presented will create a solid foundation for doing what I already love to do.......cook.

I love this book because it has so much information on techniques used in professional kitchens. It has guidelines and recipes for any culinary feat someone is faced with in the kitchen. The chapters are well laid out and information is easy to find. But be warned, this books is BIG and HEAVY.
