Overall, a very good selection of recipes. Instructions are specific and easy enough to follow to yield great results. My only quibble is that there seems to be quite a bit of specialized equipment/ingredients with the recipes written for their specific use. Takes a bit of effort to adapt to whatever you have in the house, but not too bad.

This beautiful book explains so much about baking successfully. The first recipe I tried taught me an interesting technique for making blueberry muffins. It worked like a charm. Next I will try puff pastry.

I've already made a few things from the cookbook...very easy well written instructions...great book to practice my culinary skills with. So, I went and bought the Ad Hoc at Home cookbook, too. I went to Yountville and ate at The French Laundry...what a wonderful experience...I just love Thomas Keller!!

This book achieves what to me has seemed impossible - enable home cooks to produce stunning bakery items out of their own kitchens. I have tried many recipes from this book and every item has turned out simply incredible. The real key to this books success is that every recipe was finely honed in a home kitchen, not in Bouchon's commercial kitchens, to ensure that the recipes will work without a commercial scale kitchen.
One note of caution - to get the most out of this book, you MUST have a scale, preferably a very precise and high quality scale such as one made by My Weigh. The real value of this book is that it gives calls for items by weight, not volume. The result is truly accurate and consistent results to what the authors created in their test kitchen.
Also, Thomas Keller did not write this book. The author is Sebastian Rouxel, the executive pastry chef at Bouchon Bakery.

Lots of great recipes from Keller's Bouchon (nearest here at Columbus Circle NYC). All recipes are given in grams AND volume and oven temps/timing are given for conventional as well as convection oven. LOADS of tips!

Amazing! I want to try everything in this book. As a lover of breads and sweets this is the best book I have ever purchased for those. This book should be in the kitchen so I can try all the recipes, but it is so beautiful it is on the coffee table!

Bu I am overwhelmingly happy to have this book! Since I bake mostly bread, rarely cakes, pies, etc., I have only about 12 - 15 books focused on baking. Julia Child's Mastering II & King Arthur's Baking Companion are the two I usually refer to for ideas & recipes. Bouchon Bakery is quickly becoming a third - especially for 'treats.'
The recipes have been broken down from the restaurant-size quantities, and tested, tested, tested. There are a few errors, as with virtually every book; but there is an Errata available online. I believe it was even posted in one of the reviews here.

Great read on the background of Thomas Keller beyond just the great recipes. Definitely not for novices as you'll need various kitchen tools that the average cook/baker might not have. Really enjoyed the book.

There is baking, and then there is baking from the Bouchon Bakery cookbook. If you are looking to take your baking skills to the next level, this cookbook is a must. The techniques and tips offered by Mr. Keller and Mr. Rouxel are invaluable and will help you develop your skills considerably. The recipes are some of the best I have made and have not dissapointed yet.
P.S. - Try the Macaron recipe. Challenging, but the payoff is worth it.

my guide to pastry!!!!. There is no room for error, no chance to fail... but I must accept that it takes the patience of a pattisier to truly follow and admire the recipies. Maybe not for the home cooker....unless you have the pastry gene!!!!

This is an exceptional book. Well detailed in its explanations and the pictures that show you how to bake bread, cookies and other pastries are detailed enough for the home baker to utilize in making them. There are some recipes where there seem to be missing some steps or clarification. Perhaps future editions will clarify what is missing.
