This is a great book. There is information on many ingredients you dont see in most cookbooks and lots of good tips. You dont have to be a vegetarian to own this cookbook (I'm not). Everyone needs side dishes! Although there are many things in this book that would do just fine as a main course.

but this is a super cookbook. Everything I've made from it so far has been delicious, and the recipes are very easy to follow. I recommend it for anyone who wants to do more with/get more out of vegetables and fruits. Who knew I would like parsnips?

This arrived today and I thumbed through it riveted. I can't wait to get started. I've got 2 other vegetarian cookbooks and this one beats both hands down. I love the notes in the page margins that give information about the recipes, either how to serve, what to serve with or a quick history of the ingredients.

I borrowed this book from a friend before I ordered it, so I knew what to expect. I love this book. It truly is for everyone unless you don't eat any vegetables at all. There are lots of recipes and also gives you ideas to vary them to your taste. Great book.

This book is full of information and tools in addition to a plethora of recipes ranging from simple to more complex. As a non-vegetarian who tries to focus most meals on whole natural foods, I find this to be just as useful if not more so than a traditional cookbook. Such a great find.

I frequently buy used books and this one is better than hoped for. This book is 'out of print' and is a Bible for vegetarian cooking. Moreover it has great Vegan options for key recipes. Recipes are for 'everyone'. Just add meat to some for the your non vegetarian family members.

This is a great book delivered very quickly and in very good shape. This was written in a time period when cook books tended to be more encyclopedic, but that's a good thing. Flavors trend towards Indian and Middle Eastern so lots of herbs are used as ingredients.

This cookbook is practically a bible of vegetables and a host of recipes for each. You'll discover veggies in here you've probably never seen. The recipes are amazing; the book is educational, uplifting and flavorful cooking is the key. We all need more veggies at our meals - here's a really good way to do it.

I got this book for my sister who recently became a vegetarian. She absolutely loves it. She loves how in addition to great vegetarian recipes, it breaks down a lot of basic cooking techniques and gives practical teaching help beyond just the recipes. She got another vegetarian cookbook as a gift and plans to exchange it, but loves this one.

This is one of my favorite cookbooks. The recipes are uncomplicated and give due respect to the flavor, freshness, and seasonality of each vegetable. For vegetarians and meat-eaters alike, this book is a must have.

This is my default wedding present. Have never found a recipe I didn't love - from the Sherry Vinegar vinegaret to the vegatable stock - not only does every recipe work, but they are all delicious. NOT for Vegetarians only! I'm not one, and I still love it - especially when vegetarian kids and guests come over

I admit I love the cookbook. The pancake recipe is probably the best I've ever tried, and there is so much more. Every recipe I've tried is delicious, and she offers many alternative preparations for each recipe.

But, I heard the author speak at a bookstore, and she was very condescending to vegans. Maybe she ran into a few annoying ones in her time, but in my humble opinion, most are not. And she divulged that she's not even vegetarian, but is forced by her publishing company to produce veg cookbooks only. How disappointing!

So I begrudgingly say, yes, it's a good cookbook.

I love this book not only because of the hundreds of pages of super incredible recipes but also because of the versatility within each of them. This cookbook has, as the title suggest, something for everyone. I keep this book within arms reach of my cutting board in the kitchen

We are not vegetarians, but like so many people we are trying to eat more vegetables. This cookbook is the first one I've found that has recipes that is not a disappointment.. There is more than one recipe for every vegetable imaginable, and I have yet to find one that wasn't excellent.

I own two cookbooks. This is one. It lives within a stride of my stove; it is as much - if not more - reference book as it is recipe book and it is in constant use. I'm not a vegetarian. Cooking vegetables properly is an art and properly cooked vegetables can make a meal seem even better than it may actually be. So worth it.

This is a great reference book and I will use the recipes in it from time to time. I do find some of the recipes a bit labor intensive. However the information on the right herbs and wines to pair with vegetables is a big help!

Love the cookbook. So far, I have really enjoyed the recipes. Also, it has good information on the basics of cooking such as kitchen tools and learning to correctly use a knife. Cookbook arrived timely. Awesome cookbook.

I LIKE VEGETABLES AND I ALSO LIKE MEAT......ALL KINDS......I TRIED SOME RECIPES WHICH TURNED OUT DELICIOUS. I MADE AN ENTIRE VEGETARIAN DINNER AND NO ONE REALIZED IT UNTIL I POINTED IT OUT. TOFU....WHAT A WONDERFUL "MEAT". GREAT RECIPE BOOK!!!

Great veggie cookbook for anyone trying to spice up their veggies. I'm trying my hand at being "quasi-vegetarian". I was told to buy as she is the Queen of the recipes. So far so good. Actually, tolerating life as I cut back on my beef.

I love how complete this book is, delving into various subjects and offering so many different recipes that everyone will love. It's also helpful to learn the why's and wherefore's behind the choices we make. A must for any recipe book collection!

This is our second copy of this cookbook..... we have notes and smudges all through our older copy, and decided to get an updated copy for our daughter-in-law, who is fast becoming a vegetarian, thanks to Ms. Madison's great recipes.

I love this cookbook. When I first started looking into how to cook more vegetarian meals, it gave me some great ideas. I actually gave this as a wedding gift to a friend with the hope she would love using it just as much as I do.

This classic belongs in every kitchen. Every recipe I have tried come out great! Her knowledge of vegetables is astounding. Recipes are clear and not too exotic. Her pastry experience really shows too.
