I was initially concerned about making the switch to veganism but this book had a very thorough introduction to the lifestyle. I liked how it explained many misconceptions about going vegan and the challenges that a new vegan might face. While many of the recipes require a food processor or juicer, I found that these were good investments. The recipes were very straightforward and often under ten steps. Interspersed between recipes were tips on how to stick with veganism; these simple reminders made a big difference. While eating as a vegan still has its obstacles, this book made every day cooking a bit easier.

I would definitely recommend Vegan Cookbook for Beginners to any person who is thinking about making significant dietary/lifestyle changes. The introduction of the cookbook provides a fair and unbiased evaluation of the benefits of veganism. Also the intro was extremely informative regarding the history of veganism. Since purchasing the cookbook I have already tried two of the recipes and loved the simple steps, and descriptions. Part of the reason that I gave this book five stars is the cookbook's juice recipes. I recently bought a juicer and was able to make the sweet spinach and lime juice. It was amazing!! Definitely a must read, and a great addition to any kitchen, even if you are not committed to living a vegan lifestyle.

This is an excellent book for those interested in changing their diet to vegetarianism. Personally, I need and want my meat. The information was very informative and shed a lot of light on how different foods affect the body. With incorporating anything new, there must be a transitional process. I was glad to see that they incorporated suggestions on how to transition to veganism from regular eating. While some may scoff at the thought of losing all that protein contained within meat, Olympic athlete Carl Lewis had his best year of track competition the first year he switched to a vegan diet. This is so much more than a cookbook! The sections on why people decide to become vegan, as well as the proven health benefits, were so helpful to me in reaffirming my fairly recent decision. I'm going from vegetarian to vegan, mostly for animal rights reasons, and like the extra information on how to do this in the healthiest way possible. I tried the penne with artichokes and the sweet potato stew and highly recommend them. I'm not the best cook but the recipes were really easy to follow.
