I love to cook and I have an extensive collection of recipe books. I was looking forward to receive this book. When finally arrived and I opened it, it was a big disappointment. This book only contains 14 pictures in the center of the book. This recipe book looks very boring. For visual people like me, this book is just plain. It doesn’t excite me to wanting to be curious and wanting to explore through out the book. I’m definitely going to return it.

I was so looking forward to loving this cookbook. My biggest disappointment was realizing that this is not a book of oil-free recipes. I see many posts on social media by the author and have seen some of her videos and was under the impression that she also followed oil-free cooking. I am sure I can modify to exclude it but now I have to screen every recipe carefully. My other big problem is that the print is small and light which makes it hard to read. I haven't made anything from it yet so can't comment on recipe success. I wish I had purchased the O.M.G. Good! Instant Pot recipe book instead.

I also bought Kathy Hester's Instant Pot book and the difference is stark. This is one book that is going straight to the good will :(
The recipes are unappealing, I don't feel inspired in the least. The Hester book has very helpful charts about cooking beans and grains, this one doesn't have anything like that. The Hester book also explains the Instant Pot very well and for a new owner that was quite invaluable. I'm not alway a Kathy Hester fan but her Instant Pot book is definitely a winner and in a whole other league from this one.

I found this to include too many recipes for rices and grains that are not readily available everywhere. The recipes also seemed a little boring, but maybe this is the nature of vegan pressure cooking. I did enjoy some of the spice mixture recipes.

It is a good book as far as recipies, has a lot of ethnic ones, which I really appreciate. What I disliked: lack of pictures (a few were in a mid-book insert), and its format in general. "Vegan Under Pressure" turned out to be a lot more to my liking.

I was looking for some good VEgan pressure cooking recipes. These looked good and I like Jill's videos. However, it probably is a bit too fussy right now for me.

I think she has another one that is out of print I would have liked to get.

Just has a lot of special ingredients that may be more challenging to obtain if you don't live near a Jungle Jims like I do..

but haven't tried anything yet..

Potentially helpful but the recipes lacked general appeal. Ingredients were unusual in cases, or the recipe combinations were uninteresting, unappetizing. Having looked through too many vegan cookbooks in my day, I recognized this as one I'd rarely open, despite the hype.
I also didn't love the use of manual pressure cooker instructions without electric, as most buyers are likely users of an electric one, and it seems a bit silly to pretend otherwise.

Many like it, I did not. I had made several dishes, some are long and complicated. We do not like Ethiopian, Indian food nor weirdly spiced dishes. There are plenty of different spices you need for her dishes. Some are cook, release, add, cook some more. If you family is very broadened in flavors, this may be fine for you. If your family like normal everyday good home cooking, there wont be a lot for you. That is all my opinion.

I've just looked through it so far and it looks like it has some things that I'd want to try, but there are only like 5 pictures in the whole book. I'm a very visual person, especially when it comes to food. If there isn't a picture, I'm not particularly motivated to make it. Considering returning it...

The charts and pressure cooker tips are a very useful reference. That being said, it wasn't enough for me to keep this cookbook. I ended up returning it because the recipes require a lot of specialty ingredients. I have a great local natural foods store but it's not the primary place I buy groceries. I don't want to have to make a lot of special shopping trips just to take advantage of the recipes.

This has quickly become my favorite pressure cooking cookbook! I've enjoyed every recipe I've tried so far. Jill's directions are easy to follow. She has a way of writing that makes you feel like you are getting cooking instructions from a friend instead of just pages from a book. She gives lots of tips and options with the recipes to get your creative ideas flowing. The charts are wonderful and I especially like the chapter on creating your own spice blends. If you're Vegan, Vegetarian, or even someone just interested in creating more healthy, delicious meals, I highly recommend this book. You won't be disappointed.

If you are looking to learn how to cook with pressure cooker, there really isn't a better book. Unfortunately, in my opinion, the recipes in the book are a bit mediocre and unexciting. If you are new to pressure cooking, get this book, and increase your confidence, but find recipes elsewhere.

I own an Instant Pot which included the 2nd Edition which lists the erroneous times.
I just purchased the .99 cents update of the incorrect pressure cooker recipes which says "In collaboration with ... and lists Jill Nussinow."

In the kindle update of the cooking times in the book, "Instant Pot Electric Pressure Cooker Recipes, the cooking times are incorrect. So I am curious as to the recipes in this book, "Vegan Under Pressure" if all Nussinow's tested recipes or are in collaboration with the book that had the erroneous cooking times.

I love this cookbook! I went plant based a year ago then I happened upon the Instant Pot/IP and that is how I came to this book!
This is the best vegan IP cookbook! I have made notes and hi-lighted our favorites. This is a keeper. I am still learning how to cook plant based and in the IP also. This book helps me so much and has so much information in it to guide one in your IP cooking.
Yes, recipes in this book are a bit different, so what does one do? Improvise! Make these recipes your own and use them as a guideline. Or use them just like they are and you will create new and delicious food for you and yours.

As a great fan of "The New Fast Food" I am delighted with the new "Vegan Under Pressure". Having gained my experience with pressure cooking while being guided by "The New Fast Food" this new book covers the subject in greater detail and scope. Grains and beans and soups and stews and even deserts are quick to prepare and the techniques and recipes found in the book make meal preparation fun and innovative. As the author notes, pressure cooking requires accurate timing and paying attention to what you are doing. Vegetables can be overcooked easily in a pressure cooker but if care is taken the results are excellent. With experience one can vary ingredients and timing and the recipes often allow and encourage variations to accommodate what food may be on hand. The large number of creative recipes and technical advice found make "Vegan Under Pressure" a must have accompaniment to the "New Fast Food" ... I say this having just finished preparing and enjoying the Middle Eastern Chickpea and Tomato Soup - it's terrific.

Recipes have an ingredient list a mile long, but there's still no flavor in the final product. Cooking healthy without added fat/salt doesn't need to mean flavorless. Cooking times seem off as well, certain recipes were disgustingly mushy and other bean recipes were not cooked enough. Completely inconsistent. I've tried at least 5 different recipes.

I've been vegan for almost 10 years and I've been very unimpressed with vegan pressure cooking except for staples. I've read most vegan pressure cooking books and I can confidently say there are no pictures because most vegan Instant Pot recipes turn out looking like brown mush.

The author frequents vegan pressure cooking groups on Facebook and is rude to anyone who posts bad results from the book or questions her authority. I regret buying this book.

The spreadsheets with the times and amounts for the most common veggies is worth the books price.
I was able to cook perfect black beans in 35 minutes. Wow. I haven't tried any of the more specific recipes but the help with the cooking time for everything else has helped immensely. I guess I could have googled it. This book allowed me to just look it up in the book.

I'm not a vegan, but my in-laws are. They purchased us this cookbook a few years ago, and there are quite a few gems. I've really enjoyed the Misr Wot, Creamy Dreamy Zucchini Chowder, and Middle Easter Chickpea and Tomato Soup.

The best part of the book is the basics of pressure cooking. The recipes, in general, use specialty ingredients that are either expensive, hard to find, or require many, many ingredients. I feel like buying it was a waste. I'd like simpler recipes with more common ingredients.

The mouthwatering pictures show just how delicious the recipes are and they are sure to please vegans and non-vegans alike. Can't wait to try them and keep them in my regular rotation... I'm new to pressure cooking and the Instant Pot, and love this cookbook. In fact, it's the only one I own for pressure cooking, and I don't feel the need to buy any others.

Totaly wrong cooking time instructions for beans. 4-6 minutes for soaked black beans set at high pressure and natural release. The beans were crunchy and caused a severe stomach pain. I research the cooking instructions elsewhere and found out that the proper time is 1h 20min. That's a huge difference.
The info in this book is unreliable - use at own risk! I returned the book.

I wanted to love this book.. I was so excited to get it for Mother's Day. It is all over the IP boards on Facebook, but I am totally underwhelmed. My rating is mostly due to the format ( light print, limited pictures) and harder to find ingredients. The book itself is not very appetizing... and therefore, am not inspired to try the recipes.
If you are someone who is inspired by visuals in close proximity to the actual recipes, this is not the book for you. Sadly, I am trying a new recipe for my IP tonight and it is not from this (my newest vegan pressure cooker) cookbook. I tried, I really tried, but nothing grabbed my attention.

I had heard great things about this book from a facebook group and it has not disappointed me. I use the reference pages for times and water amounts on a regular basis. The corn chowder was involved but very good. I have made a few things but hope to try more.
